I have a couple sets of GGD Depot passenger cars and I've read on the forum
of people installing chokes to allow the DCS signal to work w/o interference.

Can someone briefly explain the process and tell me what I need to do to each
car?

PS. Would others like to see an on/off switch for the lighting in these cars?

Would like to know this myself. Most 3rd Rail products I have seen use a 7806 regulating circuit powering light bulbs. I wonder how this could mess up the signal. MTH uses similar circuitry in their lighting. Anyway you can get 100uh chokes from www.allelectronics.com Cal AC101 or ACB101 or CR1000,a 1000uh choke. I imagine anywhere in the input preferably in series from the rollers. Ask over on the DCS forum.

Dale is correct. The choke is needed on GGD cars. I have many of them and have done them all. Not the worst job to do. I just did a review on the new interior lighting board GGD has. No problem with DCS signal. Scott Mann sells many of his cars to DCS users and took it upon himself to solve the problem for us.
